This is enough dressing for two large salads.

3-4 tbs. of virgin olive oil
2-3 cloves mince garlic
1-2 tsp fresh ground black pepper
3-4 tsp. fresh lemon juice

Use all ingredients fresh (instead of powdered garlic or concentrate lemon juice) Mix together in small glass bowl and refrigerate until ready to use within a few hours. Stir again before pouring on salad. Tear romaine lettuce leaves and spinach leaves and toss into two salad plates. Use boxed caesar croutons for topping. Sprinkle with fresh ground parmesan cheese or pecorino cheese and pour on half the dressing. Toss again.

I´m sure this dressing would go fine without the cheeses but who can resist the taste of fresh ground parmesan cheese or pecorino.

Hi, I get olive oil from Luca and since I live in California, where Gilroy is the garlic capital, I get fresh chopped garlic in tiny jars. When the olive oil is about half gone, I put some of my fresh chopped garlic in the olive oil bottle, and it flavors the oil and is ready to use in a minute.
