When I was in Rome, I had gniocchi in a four cheese sauce that was simply ... well ... wonderful!!!
Does anyone here have a recipe for a sauce for gniocchi? I would really appreciate it!

I usually have mine with "pesto sauce"....but I will see what I can come up with for the one you have mentioned.

Many italians say gnocchi is easy, there are two ways, one is with semolina and the most popular is with potatoes but...........last year in school where I had lessons for cooking as well, we made it......professore said I had "hot hands" and that is not good for gnocchi, only good for making bread!!!
It came out very mushy and on our last day party it was served but much was left over and it was thrown away!!!
Apparently I overworked the "dough".........like the first time I painted with oil on canvas on my own.....it became mushy and also muddy!!!
I have had gnocchi many times (keep hoping) in usa.......only one time it was light and good..........but in italia it was always good!!!

| i usually make a sugo rosa sauce with my gnocci which is pomodoro sauce with garlic and cream. |

| i'm an italian girl, i usually make the sauce for gnocchi with an italian cheese..very good...called CASTELMAGNO. or otherwhise i make a sauce with nuts and besciamella! and i need help so can anyone go to the "general forum" because this morning i've sent a question for any bocelli's fan (about his boat?)thank you, marina |

Hi everyone!
I'm Marusca, I'm new here. I'm Italian born and grew up in Tuscany. Now I live in England.
Gnocchi (correct spelling!) It's a very interesting subject for me, as one time I was choosen for my Gnocchi recipe, and also an Italian dessert; I sent them to a competition run by my local supermarket here in England, called ASDA. They choose 10 candidate in all UK, I was one of them. It's a long story, but they sent a professional cook with potographer and all the parafanelia, to my house and I had to cook for them etc.... so I made my gnocchi, all by hand, and the meat sauce. and they were very impressed, they ate ( and the dessert as well) and they said they were the most delicious gnocchi they ever had. They put me on one of their magazine! I was proud for it of course!  |

Boungiorno Marusca,
That's a terrific story! I've often wondered what might be involved while winning such a competition. That must have been a very interesting experience.
It's coincidental that you should write of this because just 3 days ago, I came across a hand held "Gnocchi Maker" that belonged to my late mother. I have no recollection of how she used this, but I'm going to try to figure out exactly how I'm supposed to utilize this tool.
In the meantime, I'm cooking up a mean Chicken Cacciatore today! It's chilly in New York and this dish along with a nice loaf of bread and a dry red wine warms us up nicely!

buongiorno
I usually make gnocchi all by hand, like my mother used to do, I never knew that there is a gnocchi maker! Usually I make the dough, which it's flour mixed with cooked and mashed potatoes, salt and a bit of tepid water, after the dough it's all nicely mixed up, you cut a lump of it a bit at the time, and roll it into like long sausages and then cut it into small lumps and (now it's hard to explain) but you roll the little lump trough the inside of a cheese greater, which will give a nice pattern! I know it doesn't sound easy, but it is!!! And usually a I like to eat them with a meat sauce, and lots of parmesan cheese. |
