Make your usual large pot of chicken soup.Salt and white pepper.
When cooked-let cool.Scoop out chicken and cut up into tiny pieces.
Put chicken pieces back into soup.
Using 1/4 lb chopped very good beef shape into tiny balls with your hands.Size of a marble.Add to chicken soup and simmer until balls are cooked. You may now put it in a large bowl and refrigerate until the next day----or continue with the next step.
Buy lage bag of toasted bread cubes(used to toast it the old fashioned way before bread cubes came out on the market)
In a large shallow dish beat a few eggs-get a large frying pan and use
corn oil or something similar(olive oil is too heavy)
Put a handful of bread cubes in eggs and place in hot oil.Saute quickly and put on paper towels that you have laid out.Sprinkle with grated parmesan cheese. Put them in a large bowl.Continue frying egg dipped cubes until you think you have enough. I always made tons because
everyone would keep sampling them.I was driven to hide them in the
cupboard.
Heat the soup up the next day. Place a handful of croutons in each
large soup dish or small dish(if using as a appetizer) put the chicken
soup over the croutons making sure each plate has chicken pieces and tiny meatballs or they will complain.
I made this (very old recipe) for every holiday and birthday or special
day for a hundred years. It takes time but you will be hailed as the worlds
best cook. Dottie
PS.I also used an old fahioned recipe for spagetti sauce that takes time
but used to make loads of it for many meals.
PS.2 Do not fry tiny meatballs for soup.Drop them in raw.It cooks up fast.

Sounds yummy Dottie, but since I can't cook worth a hill of beans and you've been making this recipe for a hundred years :shock: :!: , I'll just let you make it for me, LOL. Do we have any mutual friends getting married this summer? or any good concerts on the west coast? ~~ Becky

Hi Becky.
You can do this soup.Have Tiff help you.She can make the tiny meatballs. Loads of new concerts until October.Look at the other site.Will check for West Coast so we can go rogether.
