Tortellini Soup....

This recipe comes from the Womans Day magazine, March issue..I have made it twice now..and it is delicious! Enjoy!
1 tbsp olive oil
2 medium ribs celery, diced
1 medium carrot, diced
1 medium onion, diced
4 cloves garlic, finely chopped
3 cans (14 oz each) fat-fee chicken broth
1pkg (9 oz) refrigerated 3-cheese tortellini
1 can (19 oz) cannellini beans
1 bag (6 oz) fresh baby spinich
1/2 to 1 tsp nutmeg
1/2 tsp pepper
1) Heat oil in a 4-qt saucepan over medium-low heat. Stir in celery, carrot, onion and garlic, cover and cook 10 minutes until soft. Add broth and 2 cups water.
2) Bring to a boil; stir in tortellini and simmer as pkg directs.(usually 7-9 minutes). Stir in remaining ingredients, heat through

very good simple recipe chanah!!! I can improvise by using a pasta instead...... let's see what type would be good something close to tortelini.....maybe elbows

Yes you can improvise...maybe use elbows or ditalini the small ones as well. Enjoy !

I just found out the ingredients in pasta bocelli but no official recipe............ so will try to create it from taste description of people who have devoured it!!!
BTW....AB's favorite flavor is chestnut and his favorite dessert is cheesecake according to Bon Appetit magazine a while ago.
I created a recipe for AB and sent it to him a couple years ago for his birthday!!!
